Ingredients

1 ¾ cups all-purpose flour

½ cup powdered sugar (plus extra for dusting)

¾ cup cold unsalted butter, cubed

1 teaspoon salt

4 large eggs

1 ½ cups granulated sugar

1 tablespoon lemon zest (from about 2 lemons)

1 cup fresh lemon juice (about 4-5 lemons)

⅓ cup all-purpose flour (for filling)

1 teaspoon baking powder

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan or line it with parchment paper for easy removal.

Make the Crust: In a medium bowl, combine 1 ¾ cups of all-purpose flour, ½ cup powdered sugar, and ¾ cup cubed cold butter. Use a pastry cutter or your fingers to mix everything until it resembles coarse crumbs. Press this mixture evenly into the bottom of the prepared pan to form the crust. Bake in the preheated oven for 18-20 minutes or until lightly golden. Remove from the oven and let it cool slightly.

Prepare the Filling: In a large mixing bowl, whisk together the eggs, granulated sugar, lemon zest, lemon juice, ⅓ cup of flour, and baking powder until smooth and well combined.

Combine Layers: Pour the lemon filling over the cooled crust, spreading it evenly.

Bake: Bake the lemon bars in the oven for 20-25 minutes, or until the filling is set and the edges are lightly golden. Remove from the oven and let it cool at room temperature.

Dust & Serve: Once completely cooled, dust lightly with powdered sugar. Cut into squares or rectangles before serving.

Enjoy: These melt-in-your-mouth lemon bars are best served chilled and can be stored in the refrigerator for up to a week. Enjoy the zesty, sweet-tart flavor!
