2 pounds baby Yukon Gold potatoes

4 tablespoons unsalted butter

4 tablespoons olive oil

4 cloves garlic, smashed

1 cup vegetable broth or chicken broth

2 teaspoons fresh thyme leaves

1 teaspoon fresh rosemary, chopped

Salt and freshly ground black pepper, to taste

Fresh parsley, for garnish

Zest of 1 lemon (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Potatoes: Wash the baby potatoes thoroughly and place them in a large pot. Cover them with cold water and add a generous pinch of salt. Bring to a boil over medium-high heat and cook for about 15-20 minutes, or until fork-tender but not falling apart. Drain and let cool slightly.

      Smash the Potatoes: Once cooled, gently press down on each potato with the bottom of a glass or a potato masher to slightly crush them. Aim to flatten them to about 1/2 inch thick.

        Sauté Aromatics: In a large oven-safe skillet or cast iron pan, heat the butter and olive oil over medium heat. Add the smashed garlic and cook for 1-2 minutes until fragrant but not browned.

          Add Potatoes: Carefully add the smashed potatoes to the skillet, ensuring they are evenly spaced. Season with salt and pepper.

            Add Broth & Herbs: Pour the vegetable or chicken broth around the potatoes. Sprinkle the thyme and rosemary over the top.

              Bake: Transfer the skillet to the preheated oven and bake for about 20-25 minutes, or until the potatoes are golden brown and crispy on the edges.

                Garnish and Serve: Remove from the oven and garnish with chopped fresh parsley and lemon zest for an added burst of flavor. Serve warm and enjoy the rich, buttery goodness of melting potatoes!
