2 cups shredded cooked chicken

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 packet (1 oz) taco seasoning

1 cup sour cream

1 cup shredded cheddar cheese (plus more for topping)

1 cup diced bell peppers (red and green for color)

1 cup diced onion

1 cup corn tortillas, cut into strips

1 tablespoon olive oil

Fresh cilantro for garnish (optional)

Salt and pepper, to taste

Instructions
 

Preheat the Oven: Start by preheating your oven to 350°F (175°C).

    Sauté Vegetables: In a large skillet, heat olive oil over medium heat. Add the diced onion and bell peppers and sauté for about 5 minutes or until softened.

      Mix the Filling: In a large mixing bowl, combine the shredded chicken, black beans, corn, diced tomatoes (with their juice), taco seasoning, sour cream, and sautéed vegetables. Stir well to combine all the ingredients. Season with salt and pepper to taste.

        Layer the Casserole: In a greased 9x13 inch baking dish, layer half of the corn tortilla strips. Spread half of the chicken mixture over the tortillas, then sprinkle half of the cheddar cheese. Repeat the layering with the remaining tortillas, chicken mixture, and top with more cheddar cheese.

          Bake: Cover the dish with aluminum foil and bake in the preheated oven for about 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.

            Garnish and Serve: Remove the casserole from the oven and let it cool for a few minutes. Garnish with fresh cilantro if desired. Serve warm with additional sour cream or salsa on the side.
