Mexican Macaroni Salad

2 cups elbow macaroni

1 cup cherry tomatoes, halved

1 cup black beans, rinsed and drained

1 cup corn (fresh, canned, or frozen)

1/2 cup red bell pepper, diced

1/4 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

1/2 cup shredded Mexican cheese blend

1/4 cup mayonnaise

1/4 cup sour cream

2 tablespoons lime juice

1 teaspoon chili powder

1 teaspoon cumin

Salt and pepper to taste

Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and rinse with cold water to cool it down.

    Mix the Dressing: In a medium bowl, whisk together mayonnaise, sour cream, lime juice, chili powder, cumin, salt, and pepper until smooth.

      Combine Ingredients: In a large mixing bowl, combine the cooled macaroni, cherry tomatoes, black beans, corn, red bell pepper, red onion, cilantro, and shredded Mexican cheese blend.

        Add Dressing: Pour the dressing over the pasta mixture and stir gently to combine until everything is evenly coated.

          Chill: Cover the salad with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.

            Serve: Toss the salad again before serving. Garnish with extra cilantro and lime wedges if desired.
