Mexican Tater Tot Casserole Recipe

1 pound ground beef or turkey

1 small onion, diced

2 cloves garlic, minced

1 packet (1 ounce) taco seasoning

1 can (15 ounces) black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 can (10 ounces) diced tomatoes with green chilies

2 cups shredded cheese (cheddar and pepper jack mix)

1 (32-ounce) bag frozen tater tots

½ cup sour cream

¼ cup fresh cilantro or green onions, chopped (for garnish)

Olive oil, for cooking

Salt and pepper, to taste

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Meat: In a large skillet, heat a tablespoon of olive oil over medium heat. Add the diced onion and cook until translucent (about 3-4 minutes). Add the minced garlic and cook for another minute.

      Add the Protein: Add the ground beef or turkey to the skillet, season with salt and pepper, and cook until browned. Drain any excess fat.

        Season and Combine: Stir in the taco seasoning, black beans, corn, and diced tomatoes (with their juice). Cook for an additional 5 minutes, allowing the flavors to meld.

          Layer the Casserole: In a greased 9x13 inch baking dish, spread the meat and bean mixture evenly on the bottom. Sprinkle with 1 cup of shredded cheese. Top with the frozen tater tots in a single layer.

            Add Cheese and Bake: Sprinkle the remaining cheese over the tater tots. Bake in the preheated oven for 25-30 minutes, or until the tater tots are golden brown and the cheese is bubbly.

              Cool and Serve: Remove the casserole from the oven and let it cool for 5 minutes. Dollop sour cream on top, and garnish with fresh cilantro or green onions before serving.
