Ingredients

4 cups cooked rotisserie chicken, shredded

1 cup sour cream

1 cup cream of chicken soup

1 cup mayonnaise

2 cups cheddar cheese, shredded (plus extra for topping)

2 cups crushed buttery crackers (like Ritz)

1/2 cup green onions, chopped

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions

Preheat your oven to 350°F (175°C).

In a large bowl, combine the sour cream, cream of chicken soup, mayonnaise, garlic powder, onion powder, paprika, salt, and pepper. Mix well until smooth.

Stir in the shredded chicken, half of the cheddar cheese, and chopped green onions until combined.

In a separate bowl, combine the crushed buttery crackers with the remaining cheddar cheese. This will be your topping.

Grease a 9x13 inch baking dish and pour the chicken mixture into it, spreading evenly.

Sprinkle the cracker and cheese mixture over the top of the chicken casserole, ensuring it covers the entire surface.

Bake in the preheated oven for 30-35 minutes, or until the casserole is bubbly and the top is golden brown.

Remove from the oven and let it rest for about 5-10 minutes before serving. Garnish with fresh parsley if desired.
