1 pound elbow macaroni

4 cups sharp cheddar cheese, grated

2 cups Gruyère cheese, grated

1 cup cream cheese, softened

4 cups whole milk

1/2 cup unsalted butter, divided

1/2 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

1 teaspoon mustard powder

Salt and black pepper to taste

1 cup Panko breadcrumbs

1/2 cup Parmesan cheese, grated

Fresh herbs (such as parsley or chives) for garnish

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook until al dente according to package instructions. Drain and set aside.

    Make the Cheese Sauce: In a large saucepan over medium heat, melt 1/4 cup of the butter. Stir in the flour and cook for about 1-2 minutes until a light roux forms. Gradually whisk in the whole milk, ensuring there are no lumps. Continue to cook, stirring frequently, until the mixture thickens and starts to bubble.

      Add the Cheese: Reduce the heat to low. Stir in the cream cheese and mix until melted and smooth. Gradually add the grated sharp cheddar and Gruyère cheeses, stirring until completely melted and cohesive. Add garlic powder, onion powder, smoked paprika, mustard powder, and season with salt and black pepper to taste.

        Combine Pasta and Cheese Sauce: Remove the cheese sauce from heat, and fold in the cooked macaroni until well coated.
