Ingredients
  

2 cups rolled oats

1 cup milk (dairy or plant-based)

1 ripe banana, mashed

1/4 cup maple syrup (or honey)

1/4 cup almond butter (or any nut butter)

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup chopped nuts (walnuts, almonds, or pecans)

1/2 cup dried fruits (cranberries, raisins, or chopped dates)

Optional toppings: fresh fruit, yogurt, or nut butter

Instructions
 

Preheat your oven to 350°F (175°C) and lightly grease a muffin tin or line it with parchment paper.

    In a large mixing bowl, combine the rolled oats, baking powder, cinnamon, and salt. Stir until well mixed.

      In another bowl, mix the milk, mashed banana, maple syrup, almond butter, and vanilla extract until smooth.

        Pour the wet mixture into the dry ingredients and stir until fully combined. Fold in the chopped nuts and dried fruits.

          Using a spoon or ice cream scoop, distribute the oatmeal mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.

            Bake in the preheated oven for 18-20 minutes, or until the edges are golden brown and the center seems set.

              Once done, remove the cups from the oven and let them cool for a few minutes before gently removing them from the tin.

                Serve warm or let them cool completely before storing in an airtight container. Enjoy topped with fresh fruit, a drizzle of nut butter, or a dollop of yogurt!
