1 can (20 oz) young green jackfruit in water or brine, drained and rinsed

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1/2 teaspoon smoked paprika

1/2 teaspoon cumin powder

1/4 teaspoon cayenne pepper (optional for heat)

1 cup BBQ sauce (homemade or store-bought)

Salt and pepper to taste

12 mini slider buns

Fresh coleslaw (optional, for topping)

Fresh cilantro or parsley (for garnish)

Prepare the Jackfruit: Begin by draining and rinsing the canned jackfruit. Remove any seeds and cut the jackfruit into smaller pieces, shredding it as you go (it should resemble pulled meat).

    Cook the Aromatics: In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes, or until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

      Add the Jackfruit: Stir the shredded jackfruit into the onion and garlic mixture, cooking for about 5-7 minutes. Allow it to caramelize slightly by letting it sit without stirring for a few moments.

        Season: Add the smoked paprika, cumin, cayenne pepper (if using), salt, and pepper. Mix well to coat the jackfruit with the spices.
