6 large eggs

1/2 cup milk

1/2 cup diced bell peppers (mix of red, green, and yellow)

1/2 cup diced onions

1/2 cup cooked and crumbled breakfast sausage (or bacon)

1/2 cup shredded cheddar cheese

Salt and pepper to taste

1 tablespoon olive oil or cooking spray

Fresh herbs for garnish (e.g., chives or parsley)

Preheat Oven: Preheat your oven to 350°F (175°C). Grease a muffin tin with olive oil or cooking spray to prevent sticking.

    Prepare Egg Mixture: In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined. This will create a fluffy base for your omelets.

      Add Vegetables and Sausage: Stir in the diced bell peppers, onions, crumbled sausage or bacon, and shredded cheddar cheese into the egg mixture. Mix until evenly distributed.

        Fill Muffin Tin: Pour the egg mixture into the prepared muffin tin, filling each cup about 3/4 full. Be careful not to overfill, as the omelets will puff up while baking.

          Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes or until the omelets are set and lightly golden on top. You can check for doneness by inserting a toothpick - it should come out clean.
