Mini Breakfast Quesadilla Pockets

Ingredients
  

4 large flour tortillas

4 large eggs

1 cup shredded cheddar cheese

1/2 cup diced bell peppers (any color)

1/2 cup diced cooked ham or cooked sausage

1/4 cup chopped green onions

1/4 teaspoon garlic powder

1/4 teaspoon paprika

Salt and pepper to taste

Cooking spray or olive oil for grilling

Sour cream and salsa for serving (optional)

Instructions
 

Prepare the Filling: In a medium bowl, whisk together the eggs, garlic powder, paprika, salt, and pepper. Stir in the diced bell peppers, cooked ham or sausage, and chopped green onions.

    Cook the Eggs: In a large skillet over medium heat, lightly coat the bottom with cooking spray or olive oil. Pour in the egg mixture. Cook, stirring gently, until the eggs are scrambled and just set, about 3-4 minutes. Remove from heat and allow to cool slightly.

      Assemble the Quesadilla Pockets: Lay out one flour tortilla on a clean working surface. Spoon a generous amount of the egg filling onto one half of the tortilla and sprinkle approximately 2 tablespoons of shredded cheddar cheese on top. Fold the other half of the tortilla over to create a half-moon shape. Repeat with the remaining tortillas.

        Grill the Quesadilla Pockets: In the same skillet (or a clean one if preferred), add a little more cooking spray or olive oil. Heat over medium heat. Carefully place one or two quesadilla pockets in the skillet, depending on the size. Cook for about 2-3 minutes on each side, or until golden brown and the cheese is melted. Transfer to a plate and keep warm. Repeat with remaining quesadillas.

          Serve: Cut each quesadilla pocket into wedges and serve with sour cream and salsa on the side for dipping.
