Mini Breakfast Tacos in Muffin Tin

6 large eggs

1 cup shredded cheddar cheese

1/2 cup diced bell peppers (any color)

1/2 cup diced onion

1/2 cup cooked and crumbled breakfast sausage or turkey sausage

1/4 cup milk

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon taco seasoning (optional)

12 small corn tortillas (6-inch)

Fresh cilantro leaves, for garnish

Salsa or hot sauce, for serving

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Muffin Tin: Lightly grease a standard 12-cup muffin tin with cooking spray or olive oil.

      Cook the Vegetables: In a skillet over medium heat, add a drizzle of olive oil. Sauté the diced bell peppers and onions for about 5-7 minutes until they soften. Remove from heat and set aside.

        Mix the Egg Mixture: In a large mixing bowl, whisk together the eggs, milk, salt, pepper, and taco seasoning (if using). Add the cooked sausage, sautéed vegetables, and half of the cheddar cheese to the egg mixture. Stir until well combined.

          Prepare the Tortillas: Warm the corn tortillas slightly in the microwave (about 15-20 seconds) to make them pliable. Cut each tortilla into a circle that will fit into the muffin tin cups.

            Assemble the Tacos: Place each tortilla into a muffin tin cup, gently pressing it into the bottom and sides to form a shell. Carefully spoon the egg mixture into each tortilla-lined cup, filling them about three-quarters full.

              Add Cheese: Sprinkle the remaining cheddar cheese on top of the egg mixture in each cup.

                Bake: Bake in the preheated oven for 18-20 minutes, or until the egg has set and is slightly golden on top.

                  Cool and Serve: Once baked, remove from the oven and let cool for a few minutes. Use a butter knife to carefully lift the mini tacos out of the muffin tin.

                    Garnish and Enjoy: Top your mini breakfast tacos with fresh cilantro and serve with salsa or your favorite hot sauce!
