Ingredients
  

1 large eggplant, sliced into 1/2-inch rounds

1/4 cup olive oil

Salt and pepper, to taste

1 cup fresh mozzarella, sliced

1 cup cherry tomatoes, halved

1/2 cup fresh basil leaves

2 tablespoons balsamic glaze

1 tablespoon pesto (optional)

8 mini slider buns or lettuce leaves (for gluten-free option)

Instructions
 

Prepare the Eggplant:

    - Preheat your oven to 400°F (200°C).

      - Arrange the eggplant slices on a baking sheet. Brush both sides lightly with olive oil and sprinkle with salt and pepper.

        Roast the Eggplant:

          - Roast the eggplant slices in the preheated oven for about 20-25 minutes, flipping halfway through, until golden brown and tender.

            Assemble the Sliders:

              - Once the eggplant is ready, place one eggplant slice on the bottom half of each mini slider bun or lettuce leaf.

                - Layer a slice of mozzarella, followed by a few cherry tomato halves and some fresh basil leaves on top of each eggplant slice.

                  Add Flavor:
