1 cup cornmeal

1 cup all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/4 teaspoon cayenne pepper (optional, for a little kick)

1/4 cup sugar

1 cup milk

1/3 cup vegetable oil

2 large eggs

1 cup shredded sharp cheddar cheese

1 can (15 oz) creamed corn

1/2 cup cooked and crumbled bacon (optional, for added flavor)

12 slider-sized ground beef or turkey patties (optional, to make sliders)

Lettuce, tomato, and your choice of condiments for serving

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Grease a mini muffin tin or line it with mini muffin liners.

    Combine Dry Ingredients: In a large bowl, whisk together the cornmeal, flour, baking powder, salt, cayenne pepper (if using), and sugar until evenly mixed.

      Mix Wet Ingredients: In another bowl, mix the milk, vegetable oil, and eggs until well combined.

        Combine Mixtures: Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.

          Add Cheese and Corn: Gently fold in the shredded cheddar cheese and creamed corn until evenly distributed. If you’re using bacon, mix that in as well.

            Fill Muffin Tins: Use a tablespoon to fill each muffin cup about 2/3 full with the cornbread batter.

              Bake: Place the muffin tin in the preheated oven and bake for about 12-15 minutes or until the tops are golden brown and a toothpick inserted into the center comes out clean.

                Cook the Patties: If using meat patties, while the cornbread sliders are baking, prepare the beef or turkey patties in a skillet over medium heat, cooking until fully cooked through (about 3-4 minutes per side).

                  Assemble Sliders: Once the cornbread muffins are baked and slightly cooled, slice them in half horizontally. Place a meat patty on the bottom half, add lettuce, tomato, and your favorite condiments, and top with the other half of the cornbread slider.

                    Serve: Arrange the sliders on a large platter and serve warm. Enjoy these delightful bites as an appetizer or main dish!
