Mini Chicken Fajita Pizza Bites

1 lb (450g) chicken breast, diced

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon paprika

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper, to taste

1 medium green bell pepper, sliced

1 medium red bell pepper, sliced

1 medium onion, sliced

1 package (8 oz) pizza dough, store-bought or homemade

1 cup mozzarella cheese, shredded

½ cup salsa

Fresh cilantro, for garnish

Sour cream or Greek yogurt, for serving (optional)

Instructions
 

Prep the Chicken: In a mixing bowl, combine the diced chicken with olive oil, chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper. Toss until the chicken is well coated in the spices.

    Cook the Chicken: In a skillet over medium heat, add the seasoned chicken. Cook for about 5-7 minutes, or until the chicken is cooked through and slightly browned. Remove from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the sliced green bell pepper, red bell pepper, and onion. Sauté for about 5-6 minutes or until the vegetables are tender. Remove from heat and combine with the cooked chicken, mixing well.

        Prepare the Pizza Dough: Preheat your oven to 425°F (220°C). On a lightly floured surface, roll out the pizza dough to about ¼-inch thickness. Using a round cutter (about 2-3 inches in diameter), cut out circles of dough.

          Assemble the Pizza Bites: Place the dough circles on a baking sheet lined with parchment paper. Brush each circle lightly with olive oil. Top each circle with a spoonful of salsa, followed by a generous amount of the chicken and vegetable mixture. Finally, sprinkle shredded mozzarella cheese on top.

            Bake: Place the baking sheet in the preheated oven and bake for approximately 12-15 minutes or until the edges are golden brown and the cheese is melted.

              Serve: Once out of the oven, let the pizza bites cool for a couple of minutes. Garnish with fresh cilantro. Serve warm with sour cream or Greek yogurt on the side for dipping.
