1 bell pepper (red, yellow, or green), sliced

1 small red onion, sliced

2 tablespoon olive oil

1 tablespoon fajita seasoning

Salt and pepper to taste

12 mini waffles (store-bought or homemade)

1 cup shredded cheddar cheese

1/2 cup sour cream or Greek yogurt

1/4 cup fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Marinate the Chicken: In a bowl, combine the diced chicken with olive oil, fajita seasoning, salt, and pepper. Toss until well coated and let it marinate for about 15 minutes.
