Mini Chicken Pesto Crescent Melts

1 can (8 oz) refrigerated crescent roll dough

1 cup cooked chicken, shredded (rotisserie chicken works well)

1/2 cup basil pesto

1 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

2 tablespoons sun-dried tomatoes, chopped (optional)

Salt and pepper to taste

Olive oil for brushing

Fresh basil leaves, for garnish

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Filling: In a mixing bowl, combine the shredded chicken, basil pesto, mozzarella cheese, Parmesan cheese, and sun-dried tomatoes (if using). Stir until everything is evenly mixed. Season with salt and pepper to taste.

      Roll Out the Dough: Unroll the crescent roll dough and separate it into individual triangles. You should get 8 triangles from the can.

        Fill the Dough: Place about a tablespoon of the chicken pesto mixture on the wide end of each triangle. Be careful not to overfill, or it may ooze out while baking.

          Roll the Crescents: Starting from the wide end, roll each triangle toward the point, encasing the filling inside. Place the rolled crescents on the prepared baking sheet, point side down.

            Brush with Olive Oil: Lightly brush the tops of the crescent melts with olive oil to achieve a golden brown color as they bake.

              Bake: Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the crescents are golden brown and flakey.

                Serve: Once baked, remove the melts from the oven and let them cool slightly. Garnish with fresh basil leaves before serving.
