Mini Chicken Pesto Pita Pizzas

4 small whole wheat pitas

1 cup cooked chicken breast, shredded

1/2 cup basil pesto

1 cup mozzarella cheese, shredded

1/4 cup sun-dried tomatoes, chopped

1/4 cup artichoke hearts, chopped (canned or jarred, drained)

1/4 cup black olives, sliced

Fresh basil leaves, for garnish

Olive oil, for drizzling

Salt and pepper, to taste

Preheat the oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the pitas: Place the whole wheat pitas on the prepared baking sheet. If you want a crispier base, you can lightly toast the pitas in the oven for a few minutes before adding toppings.

      Mix the chicken: In a medium bowl, combine the shredded chicken with half of the basil pesto. Mix until the chicken is well-coated. Season with salt and pepper to taste.

        Assemble the pizzas: Spread about 1 tablespoon of remaining pesto on each pita as the sauce. Top each with an even amount of the pesto chicken mixture.

          Add toppings: Sprinkle the shredded mozzarella cheese evenly over the chicken on each pita. Add sun-dried tomatoes, artichoke hearts, and black olives on top of the cheese.

            Bake: Place the assembled mini pizzas in the preheated oven and bake for 10-12 minutes, or until the cheese is melted and bubbly, and the edges of the pitas are golden brown.

              Garnish: Once baked, remove from the oven and allow to cool slightly. Drizzle a little olive oil over the top and garnish with fresh basil leaves before serving.
