2 large pita bread (whole wheat or regular)

1 lb boneless chicken thighs, diced

1 tablespoon shawarma spice blend (or use cumin, paprika, garlic powder, and cinnamon)

2 tablespoons olive oil

1 cup Greek yogurt

1 tablespoon tahini

1 tablespoon lemon juice

1 clove garlic, minced

Salt and pepper, to taste

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 cup red onion, thinly sliced

1 cup shredded lettuce or baby spinach

1 cup shredded mozzarella cheese

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Marinate the Chicken: In a bowl, mix the diced chicken with shawarma spice blend, olive oil, salt, and pepper. Let it marinate for at least 30 minutes to an hour in the refrigerator.

    Cook the Chicken: Preheat a skillet over medium-high heat. Add the marinated chicken and cook for about 6-8 minutes or until the chicken is cooked through and slightly charred. Remove from heat and set aside.

      Prepare the Sauce: In a small bowl, combine the Greek yogurt, tahini, lemon juice, minced garlic, and a pinch of salt and pepper. Stir well and set aside to let the flavors meld.

        Assemble the Pita Pizzas: Preheat your oven to 400°F (200°C). On a baking sheet, lay out the pita bread. Spread a generous spoonful of the yogurt-tahini sauce over each pita, then top with the cooked chicken, followed by a sprinkle of shredded mozzarella cheese.

          Bake: Place the baking sheet in the preheated oven and bake for about 8-10 minutes or until the cheese is melted and bubbly.

            Add Fresh Toppings: Once cooked, remove the pita pizzas from the oven and top with cherry tomatoes, cucumber, red onion, and shredded lettuce or spinach. Drizzle a little more yogurt sauce on top, if desired.

              Garnish and Serve: Sprinkle with freshly chopped parsley and serve with lemon wedges on the side.
