When working with crescent roll dough, it’s essential to handle it delicately to avoid tearing. Begin by placing the can of dough on a flat surface before opening it. Gently press the seam where the dough is perforated to begin unrolling it. As you peel away the layers, do so slowly and carefully—this will help prevent any accidental tears. If you do encounter a tear, don’t panic! You can patch it up by pinching the edges together or using a small piece of dough to cover the gap.

Ingredients

1 can (8 oz) refrigerated crescent roll dough

1 cup cooked chicken, shredded or diced

1/2 cup taco seasoning (homemade or store-bought)

1/4 cup cream cheese, softened

1/2 cup shredded cheddar cheese

1/4 cup black beans, rinsed and drained

1/4 cup corn (fresh, frozen, or canned)

1/4 cup diced tomatoes

Fresh cilantro, for garnish

Sour cream or guacamole, for serving (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

    Prepare the Chicken Filling:

      - In a mixing bowl, combine the shredded chicken, taco seasoning, softened cream cheese, shredded cheddar cheese, black beans, corn, and diced tomatoes.

        - Mix thoroughly until all ingredients are well combined and the cream cheese is fully integrated.

          Prepare the Croissant Dough:

            - Open the can of crescent roll dough and unroll it on a flat surface. Separate the dough into triangles along the perforated lines.

              Fill the Croissant Bites:

                - Take each triangle of dough and place about 1 to 2 tablespoons of the chicken filling near the wide end of the triangle.

                  - Carefully roll up the dough from the wide end to the pointed tip, ensuring the filling stays inside. Place the rolled croissants seam-side down on the prepared baking sheet.

                    Bake:

                      - Once you have filled and rolled all triangles, bake them in the preheated oven for 12-15 minutes, or until golden brown and puffed.

                        Garnish:

                          - Remove the croissant bites from the oven and let them cool slightly. Garnish with fresh cilantro just before serving.

                            Serve:

                              - Serve warm with sides of sour cream or guacamole, if desired. Enjoy your delicious Mini Chicken Taco Croissant Bites!
