Ingredients

4 slices of whole grain bread

4 large eggs

1 cup shredded cheese (cheddar, mozzarella, or a blend)

1/2 cup diced bell peppers (any color)

1/4 cup chopped green onions

1/4 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil (for greasing)

Fresh herbs for garnish (optional, such as parsley or chives)

Instructions

Preheat the Oven:

Preheat your oven to 375°F (190°C).

      Prepare the Bread:

Use a rolling pin to flatten each slice of bread. This will help form the cups easily. Once flattened, cut a circle from each slice using a cookie cutter or a glass to fit them into a standard muffin tin.

          Form the Cups:

Lightly grease a muffin tin with olive oil. Place each bread circle into the muffin cups, pressing down gently to form a cup shape. Set aside.

              Mix the Filling:

In a medium bowl, whisk together the eggs, garlic powder, salt, and pepper. Add in the diced bell peppers and chopped green onions. Mix until well combined.

                  Assemble the Cups:

Add a generous amount of shredded cheese into each bread cup, then pour the egg mixture over the cheese until almost full. Leave a small space at the top for the eggs to expand while baking.

                      Bake:

Place the muffin tin in the preheated oven and bake for 15-20 minutes, or until the eggs are set and the bread is golden brown.

                          Cool and Serve:

Allow the mini egg toast cups to cool for a few minutes in the muffin tin. Carefully use a spoon or knife to release them from the cups. Garnish with fresh herbs if desired, and serve warm.
