2 medium-sized sweet potatoes

4 large eggs

1 cup shredded cheddar cheese

1/2 cup cooked and crumbled breakfast sausage or crumbled tofu for a vegetarian option

1/4 cup chopped green onions

1/2 teaspoon garlic powder

1/2 teaspoon paprika

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prepare Sweet Potatoes: Wash and peel the sweet potatoes. Use a grater or a food processor to grate them into fine shreds.

      Season Sweet Potatoes: In a large bowl, combine the grated sweet potatoes with garlic powder, paprika, salt, and pepper. Mix well to ensure the seasonings are evenly distributed.

        Make the Nests: Grease a muffin tin with cooking spray or olive oil. Take a handful of the seasoned sweet potatoes and press them into the bottom and sides of each muffin tin cup, creating a nest shape. Make sure they are compact to hold their shape during baking.

          Pre-bake the Nests: Place the muffin tin in the preheated oven and bake the sweet potato nests for about 18-20 minutes, or until they are tender and beginning to crisp up.

            Add Fillings: Remove the nests from the oven. Carefully crack an egg into each nest. Sprinkle a bit of shredded cheddar cheese, crumbled sausage or tofu, and chopped green onions on top of each egg.

              Bake Again: Return the muffin tin to the oven and bake for an additional 10-12 minutes, or until the eggs are cooked to your desired doneness.

                Serve: Once done, allow the nests to cool slightly before gently removing them from the muffin tin. Garnish with fresh parsley if desired and serve warm.
