Mini Taco Waffle Sandwiches

1 large egg

3 tablespoons melted butter

1 cup cooked ground beef or turkey (taco seasoned)

1/2 cup shredded cheddar cheese

1/2 cup diced tomatoes

1/4 cup diced onions

1/4 cup sliced black olives

1/4 cup sour cream (for serving)

Fresh cilantro for garnish

Preheat the Waffle Maker: Preheat your waffle maker according to the manufacturer’s instructions.

    Make the Waffle Batter: In a medium mixing bowl, whisk together the flour, cornmeal, baking powder, chili powder, and salt until well combined. In another bowl, whisk together the buttermilk, egg, and melted butter until smooth. Gradually pour the wet ingredients into the dry ingredients, stirring until just combined. Be careful not to overmix.

      Prepare Filling: In a large skillet over medium heat, warm the cooked ground beef or turkey and add taco seasoning as per the package instructions. Stir to coat the meat evenly and heat through.

        Cook Waffles: Once the waffle maker is preheated, lightly coat it with cooking spray. Pour about 1/4 cup of the waffle batter onto the center of the waffle maker, close the lid, and cook until the waffles are golden brown and crispy (about 3-5 minutes). Repeat until all batter is used, yielding approximately 8 mini waffles.
