Mini Teriyaki Chicken Lettuce Wraps

Ingredients
  

1 lb ground chicken

2 tablespoons teriyaki sauce

1 tablespoon soy sauce (low sodium)

1 tablespoon sesame oil

1 teaspoon fresh ginger, minced

2 cloves garlic, minced

1 cup bell peppers, finely chopped (any color)

1 cup carrots, grated

1/2 cup green onions, sliced

Salt and pepper to taste

1 head of iceberg or butter lettuce, leaves separated

Sesame seeds for garnish

Instructions
 

Prepare the Chicken Mixture: In a large skillet, heat the sesame oil over medium heat. Add minced garlic and ginger, sautéing for about 1 minute until fragrant.

    Cook the Chicken: Add the ground chicken to the skillet, breaking it apart with a spatula. Cook for 5-7 minutes or until browned and cooked through.

      Add Vegetables & Sauces: Stir in the chopped bell peppers, grated carrots, teriyaki sauce, and soy sauce. Mix well to combine. Cook for an additional 3-5 minutes until the vegetables are tender but still crisp.

        Season: Taste the mixture and add salt and pepper as needed. Remove from heat and stir in sliced green onions.

          Assemble the Wraps: Take a lettuce leaf and spoon a generous amount of the teriyaki chicken mixture onto the center. You can add extra green onions or sesame seeds on top if desired.

            Serve: Fold the leaf over the filling like a taco and serve immediately.
