2 medium zucchinis, finely grated

1 cup Italian bread crumbs

1 cup shredded mozzarella cheese

3 cloves garlic, minced

¼ cup fresh parsley, chopped

1 tsp Italian seasoning

1 large egg, beaten

Salt and pepper to taste

½ cup cream cheese, softened

½ cup cherry tomatoes, diced (for topping)

Olive oil, for drizzling

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare Zucchini: Place the grated zucchini in a clean kitchen towel and squeeze out excess moisture. This step is crucial for keeping the cups from becoming soggy.

      Mix Ingredients: In a large mixing bowl, combine the drained zucchini, Italian bread crumbs, mozzarella cheese, minced garlic, parsley, Italian seasoning, beaten egg, and salt and pepper. Mix until well combined.

        Form Toast Cups: Grease a muffin tin with cooking spray or olive oil. Press the zucchini mixture into the bottom and up the sides of each muffin cup to form little cups.

          Bake the Cups: Place the muffin tin in the preheated oven and bake for 15-20 minutes or until the cups are golden brown and firm to the touch.

            Prepare Cream Cheese Mix: While the zucchini cups are baking, mix the softened cream cheese with diced cherry tomatoes and a pinch of salt in a small bowl.

              Fill the Cups: Once the zucchini cups are baked, remove them from the oven and allow them to cool slightly. Using a small spoon, fill each cup with the cream cheese and tomato mixture.

                Drizzle and Garnish: Just before serving, drizzle a bit of olive oil over the top of each cup. Optionally, you can sprinkle additional fresh parsley for garnish.
