2 medium zucchinis, grated

1 teaspoon salt

1 cup all-purpose flour

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon dried oregano

1/2 teaspoon black pepper

1 large egg

1/2 cup shredded mozzarella cheese

Cooking spray or olive oil for waffle iron

Marinara sauce, for serving

Fresh basil leaves, for garnish

Prepare the Zucchini: In a large bowl, combine the grated zucchinis and salt. Let it sit for about 10 minutes to draw out moisture. After 10 minutes, squeeze the zucchini in a clean kitchen towel to remove excess liquid.

    Make the Batter: In the same bowl with the drained zucchini, add the all-purpose flour, Parmesan cheese, garlic powder, oregano, black pepper, and egg. Mix until combined. Fold in the mozzarella cheese until evenly distributed.

      Preheat the Waffle Iron: Preheat your waffle iron according to the manufacturer's instructions. Spray with cooking spray or brush with olive oil to prevent sticking.
