2 medium zucchinis, grated

1 teaspoon salt

1 cup all-purpose flour (or gluten-free flour)

1 teaspoon baking powder

1 teaspoon Italian seasoning

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 large egg

1/2 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

1/2 cup marinara sauce (plus extra for serving)

Fresh basil leaves, for garnish

Prep the Zucchini: In a large bowl, add the grated zucchinis and sprinkle with salt. Let them sit for about 10 minutes to release excess moisture. After 10 minutes, squeeze the zucchini in a clean kitchen towel or using your hands to remove as much liquid as possible.

    Mix Dry Ingredients: In another bowl, combine the flour, baking powder, Italian seasoning, garlic powder, and onion powder. Mix well to ensure all dry ingredients are evenly combined.

      Combine Ingredients: Add the squeezed zucchini, egg, Parmesan cheese, and mozzarella cheese to the dry ingredient mixture. Stir until everything is well mixed. The mixture should be thick but wet; add a little more flour if it's too runny.

        Fry the Fritters: In a large skillet, heat about 2-3 tablespoons of olive oil over medium heat.
