2 (6 oz) sea bass fillets, skin on

2 tablespoons white miso paste

1 tablespoon soy sauce

1 tablespoon mirin (Japanese sweet rice wine)

1 teaspoon sesame oil

1 teaspoon fresh ginger, grated

1 teaspoon honey or agave syrup

1 tablespoon olive oil

Salt and pepper, to taste

1 tablespoon sesame seeds, toasted

2 green onions, finely sliced (for garnish)

Fresh cilantro (for garnish, optional)

Instructions
 

Prepare the Miso Glaze: In a small bowl, combine the white miso paste, soy sauce, mirin, sesame oil, grated ginger, and honey. Whisk until smooth and well mixed.

    Marinate the Sea Bass: Place the sea bass fillets in a shallow dish and season both sides with salt and pepper. Pour the miso glaze over the fillets, making sure to coat them evenly. Cover with plastic wrap and let marinate in the refrigerator for at least 30 minutes, up to 2 hours for a deeper flavor.

      Preheat the Oven: Preheat your oven to 400°F (200°C).

        Sear the Fillets: Heat the olive oil in a oven-safe skillet over medium-high heat. Remove the sea bass from the marinade (reserve the marinade for later) and gently place the fillets skin side down in the hot skillet. Sear for 3-4 minutes, until the skin is crispy and golden brown.

          Add the Miso Glaze: Carefully flip the fillets and then brush the reserved miso marinade over the top of the fish.

            Bake the Sea Bass: Transfer the skillet to the preheated oven and bake for 6-8 minutes, or until the sea bass is just cooked through and flakes easily with a fork.

              Toast the Sesame Seeds: While the fish is baking, toast the sesame seeds in a small dry pan over medium heat for 2-3 minutes, stirring frequently until golden brown. Remove from heat and set aside.

                Serve: Once cooked, remove the sea bass from the oven. Plate the fillets and garnish with toasted sesame seeds, sliced green onions, and fresh cilantro, if desired.

                  Enjoy: Pair with steamed rice and sautéed greens for a complete meal.
