Ingredients

4 boneless, skinless chicken thighs

1/4 cup Dijon mustard

2 tablespoons honey

2 tablespoons olive oil

3 cloves garlic, minced

1 tablespoon apple cider vinegar

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions

In a medium mixing bowl, combine Dijon mustard, honey, olive oil, minced garlic, apple cider vinegar, dried thyme, smoked paprika, salt, and pepper. Whisk until well combined to create a marinade.

Place the chicken thighs in a resealable plastic bag or shallow dish, and pour the mustard marinade over the chicken, ensuring all pieces are well coated.

Seal the bag or cover the dish with plastic wrap and refrigerate for at least 1 hour, preferably overnight for maximum flavor.

Preheat your grill or oven to 375°F (190°C).

For grilling, remove the chicken from the marinade and discard the marinade. Grill each thigh for about 6-7 minutes per side or until internal temperature reaches 165°F (75°C).

For baking, place the marinated chicken thighs on a baking sheet lined with parchment paper and bake in the preheated oven for 25-30 minutes or until cooked through.

Let the chicken rest for a few minutes before slicing. Serve garnished with fresh parsley if desired.
