Ingredients

2 cups crisp rice cereal

1 cup almond butter (smooth or crunchy, your preference)

1/3 cup honey or maple syrup

1 teaspoon vanilla extract

1/2 teaspoon cinnamon (optional)

1/4 cup chopped nuts (almonds, walnuts, or pecans)

1/4 cup dark chocolate chips (optional)

Pinch of salt

Instructions

Prepare the Pan: Line an 8x8 inch square baking dish with parchment paper, leaving some overhang for easy removal later.

Mix Wet Ingredients: In a medium saucepan over low heat, combine the almond butter, honey (or maple syrup), vanilla extract, and salt. Stir continuously until the mixture is smooth and well blended. If you’re adding cinnamon, mix it in at this stage.

Combine with Rice Cereal: Remove the saucepan from heat and immediately pour the almond butter mixture over the crisp rice cereal in a large mixing bowl. Stir well until all the cereal is evenly coated with the almond butter mixture.

Add Nuts and Chocolate: Gently fold in the chopped nuts and dark chocolate chips (if using), ensuring they're evenly distributed throughout the mixture.

Press into Pan: Transfer the mixture into the prepared baking dish. Using a spatula or your hands (dampened to avoid sticking), firmly press the mixture into the pan to create an even layer.

Chill: Place the dish in the refrigerator for at least 1 hour to allow the squares to firm up.

Cut and Serve: Once set, lift the mixture out of the pan using the parchment overhang. Cut into squares or bars of your desired size. Enjoy immediately or store in an airtight container in the refrigerator for up to one week.
