1 cup rolled oats

1/2 cup almond butter (or peanut butter)

1/4 cup mini dark chocolate chips

1/4 cup honey or maple syrup

1/4 cup dried cranberries, chopped

1/4 cup sunflower seeds

2 tablespoons balsamic vinegar

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

Pinch of salt

Mix the Dry Ingredients: In a large mixing bowl, combine the rolled oats, mini dark chocolate chips, chopped dried cranberries, sunflower seeds, cinnamon, and salt. Stir until well incorporated.

    Combine the Wet Ingredients: In a separate bowl, mix the almond butter, honey (or maple syrup), balsamic vinegar, and vanilla extract until smooth.

      Combine Both Mixtures: Pour the wet ingredients into the dry mixture. Mix thoroughly with a spatula or your hands until all the ingredients are well combined and stick together. You may need to adjust the consistency by adding a little more almond butter or oats if it's too dry or too wet.

        Form the Energy Bites: Using your hands, roll the mixture into small balls, about 1 inch in diameter. You should be able to make about 12-15 bites depending on the size you prefer.

          Chill: Place the energy bites on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to help them firm up.

            Store: Once chilled, store the energy bites in an airtight container in the refrigerator for up to a week, or in the freezer for up to a month.
