For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 tablespoons sugar

For the cheesecake filling:

16 oz (2 blocks) cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

For the berry topping:

2 cups mixed fresh berries (strawberries, blueberries, raspberries)

2 tablespoons sugar

1 tablespoon lemon juice

Instructions
 

Prepare the Crust:

    - In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar.

      - Press the mixture firmly into the bottom of an 8x8 inch (or similar size) square baking dish to form an even layer.

        - Refrigerate while preparing the filling.

          Make the Cheesecake Filling:

            - In a large bowl, use an electric mixer to beat the softened cream cheese until smooth and creamy.

              - Gradually add in powdered sugar and vanilla extract, mixing until combined.

                - In another bowl, whip the heavy cream until stiff peaks form.

                  - Gently fold the whipped cream into the cream cheese mixture until well combined.

                    Combine Layers:

                      - Pour the cheesecake filling over the crust, spreading it evenly with a spatula.

                        - Smooth the top and tap the dish lightly on the counter to remove air bubbles.

                          - Cover and refrigerate for at least 4 hours, or until set.
