Ingredients

1 cup Biscoff cookies, crushed (plus extra for rolling)

8 oz cream cheese, softened

1/2 cup Biscoff spread

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup white chocolate chips

1 tablespoon coconut oil (optional, for smooth melting)

Instructions

Prepare the Cookie Base: In a mixing bowl, combine the crushed Biscoff cookies and powdered sugar. Stir until well mixed.

Creamy Mixture: Add the softened cream cheese, Biscoff spread, and vanilla extract to the cookie mixture. Beat with an electric mixer on medium speed until everything is combined and smooth. The mixture should be thick but spreadable.

Chill the Mixture: Cover the bowl with plastic wrap and refrigerate the mixture for about 30 minutes, or until it hardens enough to scoop.

Form Truffles: Once chilled, use a melon baller or your hands to scoop out equal portions of the mixture (about 1 inch in diameter). Roll them into balls and place them on a parchment-lined baking sheet.

Melt the Chocolate: In a microwave-safe bowl, combine the white chocolate chips and coconut oil (if using). Heat in the microwave in 20-30 second intervals, stirring in between, until smooth and completely melted.

Coat the Truffles: Dip each truffle into the melted white chocolate, ensuring it’s fully coated. Allow excess chocolate to drip off and gently place them back on the parchment-lined sheet.

Add Finishing Touches: While the chocolate is still wet, roll each truffle in extra crushed Biscoff cookies to create a decorative coating.

Set the Truffles: Let the truffles sit at room temperature until the chocolate hardens, or place them in the refrigerator for about 15 minutes to speed up the process.

Serve and Enjoy: Once set, serve your delightful No-Bake Biscoff Cheesecake Truffles on a platter. They are perfect for parties or as a sweet treat anytime!
