No-Bake Blueberry Cheesecake Bombs

1 cup cream cheese, softened

1/2 cup Greek yogurt (plain or vanilla)

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup graham cracker crumbs

1/4 cup unsalted butter, melted

1 cup fresh blueberries (plus extra for garnish)

1 tablespoon lemon juice

1/2 teaspoon lemon zest

Pinch of salt

1 cup white chocolate chips (for coating)

Make the Cheesecake Filling: In a mixing bowl, beat the softened cream cheese and Greek yogurt together until smooth and creamy. Add in the powdered sugar, vanilla extract, lemon juice, lemon zest, and a pinch of salt. Mix until fully combined and creamy.

    Prepare the Crust: In a separate bowl, combine graham cracker crumbs with melted butter. Mix well until the crumbs are evenly coated and resemble wet sand.

      Form the Cheesecake Balls: Using a small cookie scoop or your hands, take a portion of the cheesecake filling and flatten it in your palm. Place 2-3 blueberries in the center of the flat filling, then carefully fold the filling around the blueberries to create a ball. Roll gently to smooth the surface. Repeat this process until all the filling is used.

        Coat the Cheesecake Bombs: Melt the white chocolate chips in a microwave-safe bowl in 20-30 second intervals, stirring in between until smooth. Dip each cheesecake ball in the melted chocolate, ensuring it's fully coated. Allow any excess chocolate to drip off.

          Chill and Set: Place the coated cheesecake bombs on a parchment-lined baking sheet. Once all are coated, refrigerate for at least 1 hour or until the chocolate is set.

            Serve: Once chilled, remove from the refrigerator. Optionally, garnish with additional fresh blueberries on top. Serve cold and enjoy your delightful blueberry cheesecake bombs!
