Ingredients

1 cup creamy peanut butter

1/2 cup honey or maple syrup

1 cup rolled oats

1 cup graham cracker crumbs

1 cup dark chocolate chips

2 tablespoons coconut oil

1/2 teaspoon vanilla extract

Pinch of salt

Instructions

Prepare the Base: In a large mixing bowl, combine the creamy peanut butter and honey (or maple syrup). Stir them together until smooth and well combined.

Add Dry Ingredients: Add the rolled oats, graham cracker crumbs, vanilla extract, and a pinch of salt to the peanut butter mixture. Mix with a spatula until all dry ingredients are thoroughly coated with the peanut butter mixture. It'll form a thick, sticky mixture.

Press into a Pan: Line an 8x8-inch baking dish with parchment paper for easy removal later. Pour the peanut butter mixture into the dish and press it down firmly with the back of a spatula to create an even layer.

Melt the Chocolate: In a small saucepan over low heat, combine the dark chocolate chips and coconut oil. Stir continuously until melted and smooth. Remove from heat.

Top the Bars: Pour the melted chocolate over the pressed peanut butter layer in the baking dish. Use a spatula to spread it evenly over the top.

Chill: Place the dish in the refrigerator for at least 2 hours, or until the bars are firm and the chocolate is set.

Slice and Serve: Once chilled, lift the bars out from the parchment paper and place on a cutting board. Cut into squares or rectangles, depending on your preference.

Storage: Store the bars in an airtight container in the refrigerator for up to a week.
