No-Bake Orange Pineapple Swirl Cheesecake

For the Crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 tablespoons sugar

For the Cheesecake Filling:

24 oz cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

For the Orange Pineapple Swirl:

1 cup canned crushed pineapple, drained

½ cup fresh orange juice

Zest of 1 orange

¼ cup granulated sugar

1 teaspoon cornstarch

1 tablespoon water

Prepare the Crust: In a medium bowl, mix the graham cracker crumbs, melted butter, and sugar until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Chill the crust in the refrigerator while you prepare the filling.

    Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add the powdered sugar and vanilla extract, mixing well to combine. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until no streaks remain.

      Prepare the Orange Pineapple Swirl: In a saucepan over medium heat, combine the drained crushed pineapple, fresh orange juice, orange zest, granulated sugar, cornstarch, and water. Stir until the mixture starts to bubble and thicken, about 5-7 minutes. Once thick, remove from heat and allow to cool slightly.

        Assemble the Cheesecake: Pour half of the cheesecake filling into the chilled crust. Swirl in half of the orange pineapple mixture, then gently spread the remaining cheesecake filling on top. Finally, add the remaining orange pineapple swirl and gently swirl with a knife to create a marbled effect.

          Chill: Cover the cheesecake with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
