Ingredients

24 Oreo cookies, crushed

1/4 cup unsalted butter, melted

16 oz cream cheese, softened

1/2 cup granulated sugar

1 tsp vanilla extract

1 cup heavy whipping cream

12 Oreo cookies, chopped (for filling)

Additional Oreo cookies for topping

Optional: whipped cream for garnish

Instructions

Prepare the Crust: In a medium bowl, combine the crushed Oreo cookies and melted butter. Mix until the crumbs are evenly coated and resemble wet sand. Press this mixture firmly into the bottom of a 9x9 inch baking pan to form a solid crust. Place the pan in the refrigerator to set while you prepare the filling.

Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy, about 2-3 minutes. Gradually add the granulated sugar and vanilla extract, continuing to mix until fully incorporated and no lumps remain.

Whip the Cream: In a separate bowl, whip the heavy cream using an electric mixer until stiff peaks form. This process should take around 2-3 minutes. Gently fold the whipped cream into the cream cheese mixture using a spatula, careful not to deflate the whipped cream.

Add Chopped Oreos: Once well combined, fold in the chopped Oreo cookies until evenly distributed throughout the creamy mixture.

Layer the Filling: Pour the cheesecake filling over the chilled Oreo crust, smoothing the top with a spatula. You can add some additional chopped Oreo cookies on top for decoration if desired.

Chill the Bars: Cover the pan with plastic wrap and refrigerate for at least 4 hours, or until the cheesecake is set completely. For best results, let it chill overnight.

Slice and Serve: Once set, cut the cheesecake into bars. Serve chilled, topped with a dollop of whipped cream and extra Oreo pieces if desired. Enjoy every rich and creamy bite!
