24 Oreo cookies, crushed into fine crumbs

4 tablespoons unsalted butter, melted

For the cheesecake filling:

16 oz cream cheese, at room temperature

1 cup powdered sugar

1 teaspoon vanilla extract

2 cups whipped cream (homemade or store-bought)

12 Oreo cookies, coarsely chopped

For the topping:

6 Oreo cookies, finely crushed (for garnish)

Additional whipped cream (optional)

Instructions
 

Prepare the crust:

    - In a medium mixing bowl, combine the crushed Oreo cookies and melted butter. Stir until the mixture resembles wet sand.

      - Press the mixture firmly into the bottom of a lined 9x9 inch (or similar size) square baking dish to form an even crust. Set aside.

        Make the cheesecake filling:

          - In a large bowl, beat the cream cheese with an electric mixer on medium speed until smooth and creamy.

            - Gradually add powdered sugar and mix until fully incorporated.

              - Add vanilla extract and mix until just combined.

                - Gently fold in the whipped cream until the mixture is light and airy.

                  - Finally, fold in the coarsely chopped Oreo cookies, being careful not to deflate the filling.

                    Assemble the bars:

                      - Spread the cheesecake filling evenly over the prepared crust, smoothing the top with a spatula.

                        - Sprinkle the finely crushed Oreo cookies over the top of the cheesecake layer for added texture and flavor.

                          Chill:

                            - Cover the dish with plastic wrap and refrigerate for at least 4 hours, or until the cheesecake is set. For best results, chill overnight.

                              Serve:
