Ingredients
  

1 cup rolled oats

1/2 cup almond butter (or peanut butter)

1/3 cup honey or maple syrup

1/2 cup dried peaches, finely chopped

1/4 cup ground flaxseed

1/4 cup chia seeds

1 teaspoon vanilla extract

A pinch of sea salt

Optional: 1/4 teaspoon cinnamon for added flavor

Instructions
 

In a large mixing bowl, combine the rolled oats, ground flaxseed, chia seeds, and a pinch of sea salt. If you're using cinnamon, add it here as well.

    In a separate bowl, mix together the almond butter and honey (or maple syrup) until smooth and well combined. Stir in the vanilla extract.

      Pour the almond butter mixture into the dry ingredients. Add the finely chopped dried peaches and mix well until everything is fully combined and sticky.

        Using your hands, portion out the mixture and roll it into small balls, about 1 inch in diameter.

          Place the energy bites on a parchment-lined baking sheet or plate. If desired, you can roll the bites in extra chia seeds or oats for added texture.

            Refrigerate the energy bites for at least 30 minutes until they firm up.

              Store the bites in an airtight container in the refrigerator for up to a week, or freeze them for longer storage.
