No-Bake S’mores Pie

1 ½ cups graham cracker crumbs

½ cup unsweetened cocoa powder

½ cup granulated sugar

½ cup unsalted butter, melted

1 cup heavy cream

1 cup mini marshmallows

1 cup semi-sweet chocolate chips

1 teaspoon vanilla extract

½ cup mini chocolate chips (for topping)

Extra mini marshmallows (for garnish)

A pinch of sea salt

Instructions
 

Prepare the Crust: In a medium bowl, mix the graham cracker crumbs, cocoa powder, granulated sugar, and melted butter until the mixture resembles wet sand. Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish to create an even crust. Place the crust in the refrigerator to set while you prepare the filling.

    Make the Chocolate Filling: In a saucepan over low heat, combine the heavy cream and chocolate chips. Stir constantly until the chocolate is fully melted and the mixture is smooth. Remove from heat and stir in the vanilla extract and a pinch of sea salt. Let this filling cool for about 10 minutes.

      Whip the Cream: In a large mixing bowl, whip the remaining heavy cream until soft peaks form, about 3-4 minutes with an electric mixer.

        Combine: Gently fold the cooled chocolate mixture into the whipped cream until well combined, being careful not to deflate the whipped cream too much.

          Assemble the Pie: Pour the chocolate filling into the chilled graham cracker crust, smoothing it out evenly. Top with mini marshmallows and sprinkle mini chocolate chips over the top for added texture and flavor.

            Chill: Place the pie in the refrigerator for at least 4 hours (or overnight) to allow it to set properly. If desired, you can use a kitchen torch to lightly toast the marshmallows on top before serving.

              Serve: When ready to serve, remove the pie from the refrigerator. Optionally, garnish with additional mini marshmallows and a drizzle of chocolate sauce before slicing.
