Ingredients

For the crust:

1 ½ cups graham cracker crumbs

⅓ cup granulated sugar

½ cup unsalted butter, melted

For the cheesecake filling:

16 oz (2 packages) cream cheese, softened

1 cup powdered sugar

1 tsp vanilla extract

1 cup heavy whipping cream

For the strawberry topping:

2 cups fresh strawberries, hulled and sliced

2 tbsp granulated sugar

1 tbsp lemon juice

Instructions

Prepare the crust:

    - In a medium mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until the mixture resembles wet sand.

      - Press the mixture firmly into the bottom of a greased 8x8-inch baking dish. Use the back of a measuring cup to compress it evenly.

        - Refrigerate the crust while you prepare the filling.

          Make the cheesecake filling:

            - In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

              - Gradually add powdered sugar and vanilla extract, mixing until well incorporated.

                - In a separate bowl, whip the heavy cream until soft peaks form.

                  - Gently fold the whipped cream into the cream cheese mixture until fully combined and fluffy.

                    Assemble the cheesecake bars:

                      - Pour the cheesecake filling over the chilled crust, smoothing it out with a spatula.

                        - Cover the baking dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.

                          Prepare the strawberry topping:

                            - In a small bowl, combine the sliced strawberries with granulated sugar and lemon juice. Toss until the strawberries are well-coated. Let them sit for 15-20 minutes to release their juices.

                              Serve:

                                - Once the cheesecake has set, remove it from the refrigerator. Cut into squares and top each bar with a spoonful of the macerated strawberries.

                                  - For an extra touch, drizzle with any accumulated strawberry juice.

                                    Enjoy:

                                      - Serve the bars chilled, and indulge in this no-bake delight!
