1 cup rolled oats

1/2 cup natural peanut butter (or almond butter)

1/3 cup honey or maple syrup

1/4 cup ground flaxseed

1/2 cup mini chocolate chips (or dried fruit for a healthier option)

1/4 cup shredded coconut (unsweetened)

1 teaspoon vanilla extract

Pinch of sea salt

Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, ground flaxseed, and shredded coconut. Mix thoroughly to ensure even distribution.

    Mix Wet Ingredients: In a separate bowl, whisk together the peanut butter (or almond butter), honey (or maple syrup), vanilla extract, and a pinch of sea salt until smooth and well combined.

      Combine Mixtures: Pour the wet mixture into the dry mixture and stir until all ingredients are combined. If using chocolate chips or dried fruit, fold them in at this stage.

        Form the Bites: Using your hands, scoop out about 1 tablespoon of the mixture and roll it into a ball. Place the formed energy bites on a baking sheet lined with parchment paper. Continue until all the mixture is used up.

          Chill: Place the baking sheet in the refrigerator for about 30 minutes, which will help the bites to firm up.

            Store: Once chilled, transfer the energy bites into an airtight container. They can be stored in the fridge for up to a week or in the freezer for longer storage.
