Nutella Pancake Bites

1 cup all-purpose flour

1 tablespoon sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup buttermilk (or milk with 1 tablespoon vinegar, let sit for 5 mins)

1 large egg

2 tablespoons melted butter (plus extra for cooking)

1/2 cup Nutella

Powdered sugar, for dusting (optional)

Fresh berries, for serving (optional)

Instructions
 

Prepare the Batter: In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt. Whisk together until well blended.

    Mix Wet Ingredients: In another bowl, whisk together the buttermilk, egg, and melted butter until fully combined.

      Combine Ingredients: Gradually add the wet ingredients to the dry ingredients. Stir gently until just combined; it's okay if there are a few lumps—do not overmix.

        Heat the Pan: Preheat a non-stick skillet or griddle over medium heat. Lightly grease it with a bit of melted butter.

          Cook the Pancake Bites: Pour small amounts of pancake batter (about 1 tablespoon) onto the skillet, spacing them about 2 inches apart. Before the bubbles form on the surface, place a small spoonful of Nutella in the center of each pancake. Cover with another tablespoon of batter.

            Flip Carefully: After 2-3 minutes, once the edges look set and bubbles appear on top, gently flip each pancake bite. Cook for another 2-3 minutes until golden brown.

              Repeat: Continue the process until all the batter is used, greasing the skillet as necessary.

                Serve: Arrange the Nutella pancake bites on a plate. Dust with powdered sugar and serve warm, topped with fresh berries if desired.
