Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.

Mix the Wet Ingredients: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Beat in the eggs, one at a time, then stir in the vanilla extract.

Combine Dry Ingredients: In another bowl, whisk together the flour, baking soda, cinnamon, and salt.

Combine Mixtures: Gradually add the dry mixture to the wet mixture, mixing just until combined. Fold in the oats and optional raisins or nuts.

Form Cookies: Drop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Bake the Cookies: Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown. The center will look slightly underbaked. Allow them to cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.

Prepare the Cream Filling: While the cookies are cooling, make the cream filling. In a mixing bowl, beat the softened butter until creamy. Gradually add in the powdered sugar, beating until well blended. Add the vanilla and heavy cream, and continue to beat until smooth and fluffy.

Assemble the Pies: Once the cookies are completely cool, flip half of them over and spread a generous dollop of cream filling on the flat side. Top with another cookie, flat side down, to create a sandwich.

Chill and Serve: For the best flavor and texture, refrigerate the assembled oatmeal cream pies for at least 30 minutes before serving. Enjoy your nostalgic treat!
