1 cup rolled oats

1 1/2 cups boiling water

1 cup granulated sugar

1 cup brown sugar, packed

1 cup vegetable oil

3 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon salt

1 cup chopped pecans or walnuts (optional)

1 cup shredded coconut (optional)

Prepare Oats: In a medium bowl, combine the rolled oats and boiling water. Let them sit for about 20-30 minutes to soften and absorb the water.

    Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan or line it with parchment paper for easy removal.

      Mix Wet Ingredients: In a large mixing bowl, mix together the granulated sugar, brown sugar, and vegetable oil until well combined. Then add the eggs one at a time, beating thoroughly after each addition. Stir in the vanilla extract.

        Combine Ingredients: Add the soaked oats (with any remaining water) to the wet mixture and stir until well incorporated.

          Mix Dry Ingredients: In another bowl, sift together the flour, baking soda, baking powder, ground cinnamon, and salt.

            Combine Wet and Dry: Gradually add the dry ingredients to the oat mixture, mixing until just combined. If desired, stir in the chopped nuts and shredded coconut.

              Pour Batter: Pour the batter into the prepared baking pan, smoothing it out evenly.

                Bake: Place the pan in the preheated oven and bake for 35-45 minutes, or until a toothpick inserted in the center comes out clean and the top is golden brown.

                  Cool and Serve: Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
