1 lb large shrimp, peeled and deveined

1 cup long-grain rice

2 cups chicken broth

1 medium onion, diced

1 bell pepper (red or green), diced

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, undrained

2 tbsp Cajun seasoning

1 tsp smoked paprika

Salt and pepper, to taste

2 tbsp olive oil

½ cup green onions, chopped (for garnish)

1 lime, cut into wedges (for serving)

Instructions
 

Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, and sauté for about 5 minutes until they soften. Stir in the minced garlic and cook for an additional minute until fragrant.

    Toast the Rice: Add the long-grain rice to the skillet and cook for about 2-3 minutes, stirring frequently until the rice is lightly toasted.

      Add Liquids and Seasoning: Pour in the chicken broth and diced tomatoes (with juice). Sprinkle in the Cajun seasoning, smoked paprika, salt, and pepper. Stir well to combine.
