One-Pan Cheesy Chicken and Broccoli Bake

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

2 cups fresh broccoli florets

1 cup cooked rice (white or brown)

1 cup shredded cheddar cheese

1 can (10.5 oz) cream of chicken soup

1/2 cup milk

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper, to taste

1 tablespoon olive oil

1/2 teaspoon red pepper flakes (optional, for a kick)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté Chicken: In a large skillet or oven-safe pan, heat the olive oil over medium-high heat. Add the bite-sized chicken pieces, season with salt, pepper, onion powder, garlic powder, and paprika. Sauté for about 5-7 minutes, until the chicken is browned and cooked through. Remove the chicken from the pan and set aside.

      Prepare the Sauce: In the same pan, lower the heat to medium. Add the minced garlic and cook for 1 minute, until fragrant. Stir in the cream of chicken soup and milk until smooth. Let it simmer for another 2-3 minutes, then add in the cooked rice, combining well.

        Add Veggies: Gently fold in the broccoli florets and cooked chicken into the creamy mixture. Sprinkle with red pepper flakes if you prefer some heat. Adjust salt and pepper to your taste.

          Cheesy Layer: Sprinkle half of the shredded cheddar cheese over the mixture, stirring slightly to incorporate.

            Bake: Evenly distribute the remaining cheddar cheese on top. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly.
