1 lb (450g) boneless, skinless chicken breasts, diced

2 cups fresh broccoli florets

1 cup uncooked rice (white or brown)

2 cups chicken broth

1 cup shredded sharp cheddar cheese

½ cup heavy cream

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the diced chicken to the skillet, seasoning with salt, pepper, paprika, and onion powder. Sauté until the chicken is golden brown and cooked through, about 5-7 minutes. Make sure to stir occasionally to cook evenly.

    Add Garlic: Once the chicken is cooked, add the minced garlic to the skillet and cook for about 1 minute, until fragrant.

      Combine Rice and Broth: Stir in the uncooked rice, then pour in the chicken broth. Bring the mixture to a simmer, stirring occasionally to prevent sticking. Cover the skillet and reduce the heat to low. Let it cook for about 15-20 minutes, or until the rice is tender and has absorbed most of the broth.

        Steam the Broccoli: After the rice is cooked, add the broccoli florets to the skillet. Pour the heavy cream over the top and stir gently to combine. Cover the skillet again and let it steam for about 5 minutes, or until the broccoli is tender and vibrant green.
