1 lb (450g) boneless, skinless chicken thighs or breasts, cut into bite-sized pieces

1 cup uncooked long-grain rice

2 cups chicken broth

1 cup shredded cheddar cheese (or your favorite cheese)

1 cup frozen mixed vegetables (peas, carrots, corn)

1 medium onion, diced

3 cloves garlic, minced

1 teaspoon paprika

1 teaspoon dried oregano

½ teaspoon salt

½ teaspoon black pepper

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Pan: Preheat your oven to 375°F (190°C). Heat a large oven-safe skillet or pan over medium heat and add the olive oil.

    Sauté Chicken: Add the chicken pieces to the skillet and season with salt, pepper, paprika, and oregano. Sauté for about 5-7 minutes until the chicken is browned on the outside but not fully cooked. Remove chicken from the pan and set aside.

      Cook Onion and Garlic: In the same skillet, add the diced onion and cook for 2-3 minutes until translucent. Add the minced garlic and cook for another minute until fragrant.

        Combine Rice and Broth: Stir in the uncooked rice, followed by the chicken broth. Bring the mixture to a simmer.

          Add Veggies and Chicken: Once simmering, return the chicken to the skillet. Stir in the frozen mixed vegetables.

            Cheese it Up: Sprinkle half of the shredded cheese over the mixture, reserving the other half for later.

              Bake: Cover the skillet with a lid or aluminum foil and transfer to the preheated oven. Bake for 25-30 minutes, or until the rice is fully cooked and has absorbed the liquid.

                Add Remaining Cheese: Remove the skillet from the oven, uncover, and sprinkle the remaining cheese on top. If desired, return to the oven uncovered for an additional 5-7 minutes, until the cheese is melted and bubbly.

                  Garnish and Serve: Once done, remove from the oven and garnish with chopped fresh parsley. Let it cool for a few minutes before serving.
