1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup long grain white rice

1 onion, finely chopped

3 cloves garlic, minced

1 bell pepper, diced (red or yellow for sweetness)

1 can (14.5 oz) diced tomatoes, undrained

2 cups low-sodium chicken broth

1 cup shredded cheddar cheese

1 tsp paprika

1 tsp dried oregano

1/2 tsp salt

1/4 tsp black pepper

2 tbsp olive oil

Fresh parsley, chopped for garnish (optional)

Sauté the Chicken: In a large skillet over medium-high heat, heat olive oil. Add the chicken pieces, season with salt, pepper, and paprika. Cook for about 5-7 minutes, until the chicken is browned and cooked through. Remove the chicken from the skillet and set it aside.

    Cook the Vegetables: In the same skillet, add the chopped onion and bell pepper. Sauté for about 3-4 minutes until they soften. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Add Rice and Liquids: Add the rice to the skillet, stirring well to coat it with the oil and vegetables. Pour in the diced tomatoes (with their juice) and chicken broth. Stir to combine everything and bring to a simmer.

        Combine Chicken and Spices: Return the cooked chicken to the skillet, and sprinkle the oregano over the mixture. Stir it gently to combine. Ensure that the rice is submerged in the liquid.
